Description

Bolognami Umbrian Bread, has the peculiar characteristic of having a minimum quantity of salt in the dough, so small that it is not perceptible to the palate. Baked in a wood oven and naturally leavened, "Sciocco" bread is shaped like a loaf or loaf, with a crunchy crust and a soft interior. The origin of this bread is linked to the Perugia Salt War, which in 1540 saw the city, which at the time belonged to the territory of the Papal State, rise up against Pope Paul III due to a new increase in the salt tax. The bakers participated in the protest by making the "Sciocco" bread ever since
