Pecorino Toscano DOP Caseificio Manciano, is a fresh soft sheep's cheese. It is produced from pasteurised sheep's milk with the addition of selected indigenous starter cultures, rennet and salt. The minimum maturation period is 20 days, as established by the Production Disciplinary in order to affix the PDO mark in ink. It is generally consumed after 30/45 days and its sweet and delicate flavour evokes the scent of Tuscan pastures.
