Description

Torta al Testo Bolognami, it is so called because of the characteristic tool that is used for cooking, a disk with a thickness of about 3 cm called Testo that was heated on the embers of the fireplace, formerly obtained from large refractory stones, today it is possible to find it in cast iron or cement. Called "Crescia" in the Gubbio area, "Torta sotto lu focu" in the Terni area, Torta al Testo is a very simple round unleavened focaccia, made with soft wheat flour, olive oil, water and a pinch of salt, its origin is lost in the mists of time, for centuries for the peasants of our region it was the fastest thing to cook once they arrived home tired from the fields
