We at Bolognami are lucky enough to be located between Umbria and Tuscany so our tradition of bakery products concerns both regions. In fact we have Unsalted Bread , Umbrian Strettura Bread and Tuscan Bread D.O.P. all naturally leavened obtained with mother yeast, the renowned Torta Umbra al Formaggio, once produced only in the Easter period and now all year round, the famous Torta al Testo, a reminder of the simplicity of our farmers' cuisine.
