The harvest of the fruit takes place at the right degree of ripeness, brought to the mill a little later they are processed according to cold extraction with DMF technology to ensure the best taste and the maintenance of the original organoleptic properties. All this combined with the relationship that binds an olive grove to the microclimate and the characteristics of the land where it is grown determines the character, quality and uniqueness of this oil. It presents itself to the nose with a medium fruitiness of vegetable type, with a good structure.
