Bolognami Tuscan Salami, produced with a minimum maturation of two months, cured in natural casings. Artisan product also called Mortadella Toscana, obtained by finely grinding the lean parts of the pig such as shoulder, ham and neck, with the diced fat obtained from the dorsal region of the animal, finally combining all the natural flavors. The tradition of the product is linked to the ancient and unchanged processing method, characterized by the typical diced fat that can be seen at the time of cutting
