Description

Pecorino di Pienza Aged in Fossa Fattoria Buca Nuova, made from selected pasteurised sheep's milk from pastures ranging from Val d'Orcia to Val di Chiana. It is matured in Fosse di Tufo in Sogliano al Rubicone in a controlled environment for 4 months, each wheel is packed in a cotton bag and pitted for 3 months. The cheese wheel is strongly influenced by the passage in the pit, where unique temperature and humidity conditions create the ideal environment for numerous chemical, physical and microbiological transformations to take place that turn a normal cheese into the unmistakable product that is Formaggio di Fossa. The moulds come back to life reshaped, elongated, twisted compared to the original one. Slightly crumbly and unctuous rind that remains wrapped in the bag, it is advisable to remove it by scraping lightly to avoid extraneous flavours. Straw-yellow paste with slight eye formation.
