Matured Salted Ricotta Il Ceseificio di Norcia, is characterised by its maturation period of 40 to 120 days covered with wheat bran to improve the latter. In ancient times, this type of salted ricotta was created in order to have a food that could be preserved over time from a fresh product. Its taste is quite savoury, with a flavour of milk and cream. Sheep's milk whey and cow's milk whey are used for this cheese, and it is a unique and typical product of the Norcia area.
