Description

Pecorino Aged in Fossa Testanera Il Caseificio di Norcia, obtained from selected sheep's milk. It is first matured for 80 days in the cheese factory and is then sunk in the Malatestian Pits in sandstone from September to November, approximately 3 months. The moulds return to the light reshaped, twisted from the original one a cheese with a strong and decisive flavour accompanied by characteristics of compactness and graininess that make it unique. Preservative-free.
