Prosciutto Toscano D.O.P.
Prosciutto Toscano D.O.P., is an Italian ham originating in the Tuscany Region, it is obtained from pork legs reared exclusively in Central and Northern Italy. Already in the Middle Ages there is evidence of the production of this Ham, but only at the time of the Medici, lords of Florence, there are evidence of laws aimed at regulating the production and maturing system that have been handed down and are still the basis of the product today. It must have a maturation of at least twelve months, in average weight between 7 and 10 kilograms, the color varies between different shades of red, to a low amount of fat that gives the product a delicate taste, also the result of the particular seasoning technique used
