Pecorino Toscano DOP Aged 12 Months Il Caseificio di Manciano, obtained from pasteurised sheep's milk recognisable by the consortium's DOP mark stamped on it. With the guaranteed minimum maturation period of 12 months, it was decided to give a more precise connotation to a product that, precisely because of the passage of time, manages to express to the full all the fragrances and aromas typical of Pecorino Toscano DOP Stagionato Classico. The special ageing conditions, designed to enhance the organoleptic characteristics to the utmost, do not however affect its structure, which remains that of a pleasant Pecorino with a well-defined territorial identity.
