Caciottone of the Caseificio di Norcia, obtained from sheep's and cow's milk, slightly eye-shaped in the paste, fresh and delicate, with a flavour that is both sweet and piquant at the same time. It is produced with a maturation period ranging from 70 to 120 days, and when tasting this cheese one can perceive the fragrance and aromas of a land rich in traditions and local cultures of the Valnerina.
