Chianina
The Chianina is a beef breed indigenous to the Valdichiana Senese and Aretina. Used for thousands of years since Etruscan and Roman times and by our peasants as a working breed, but because of its beauty and snow-white coat it was also used for ceremonial and triumphal processions, which is still the case today, in fact it is made to pull the Carroccio during the Palio of Siena. Today, its meat is among the most delicious, and it is from it that the famous Bistecca alla Fiorentina and other high quality cuts are made. It is the queen of beef, one of Italy's gatronomic delights.
