Description

Umbricelli or Stringozzi or Bigoli Bolognami are a simple, fresh Umbrian pasta, prepared with only soft wheat flour, water and salt. Typical pasta of the Umbrian culinary tradition, Umbrichelli are irregular and thick fresh spaghettoni which are seasoned in various ways, from classic tomato and basil sauces to cream and truffle, with vegetables or cheese and pepper, in carbonara, stringozzi are famous with rancetto, prepared with pork barbozzo, umbricelli alla norcina are also excellent, in short, so on and so forth. You should know that Umbricelli are called this from the Umbrian dialect umbrico which means earthworm, a characteristic shape of this fresh pasta and they are strangled at the ends, hence the name Stringozzi
