Description
Botrosecco Fattoria Le Mortelle, comes from the heart of the Tuscan Maremma, just a few kilometres from Castiglione della Pescaia, in an extraordinary and fascinating position both for its nature and for the history of the places that surround it. The soil, of medium consistency, sandy and loamy, has a predominantly siliceous-clayey composition and is, in certain areas, rich in skeleton.
Vinification
Harvesting began at the end of September with the Cabernet Franc, capable of giving the wine an elegant tannic structure, and continued a week later with the Cabernet Sauvignon, characterised by fragrances of ripe black fruit. On arrival at the winery, the grapes, carefully selected at harvest, were destemmed and gently crushed and transferred to stainless steel tanks, where alcoholic fermentation took place at a temperature of around 25 °C in order to enhance the characteristic varietal aromatic component and maintain greater fruit integrity. During maceration, which lasted about 15 days, appropriate soaking of the pomace cap was carried out to extract only the most valuable tannins. The wine was then transferred to stainless steel tanks, where malolactic fermentation took place and was completed by the end of the year.
Refinement
It then rested 12 months in barriques before refining in the bottle.

Tasting Notes | In the glass it has a ruby red colour. The nose is rich, dominated by hints of small berries, such as raspberries, well complemented by delicate notes of tobacco, white pepper and eucalyptus. The palate is savoury and persistent, with enveloping tannins and a pleasant aftertaste of fresh fruit and cocoa. |
