Description
Rubium Riserva Terre de la Custodia is produced from Typical Grapes of Montefalco, Sangiovese and Merlot grapes grown at an altitude of approx. 400 metres above sea level, using the spurred cordon training system in vineyards approx. 15 years old, located in the areas of Gualdo Cattaneo and Giano dell'Umbria. The land is medium hilly, where we find a light soil tending to limestone. The surface area of the vineyard is approx. 20 ha with a planting density of 5000 vines/hectare for an average production per hectare of 100 quintals.
Vinification
Before the harvest, a thinning of the bunches of grapes is carried out in the vineyard, where the less ripe and problematic ones are eliminated. The grapes are harvested manually, usually from the end of September until the first week of October. Once in the cellar, the grapes are destemmed, lightly crushed and cooled to a temperature of 10° C and left to ferment with inoculation of selected yeasts in steel tanks with an automated cooling and pumping over system. The pumping over will only begin when the alcohol levels have reached an optimal stability for the extraction of the tannins, so that they bind with the colouring substances for long stability. Alcoholic fermentation lasts about 15 days during which it remains in contact with the skins. After separation from the skins, malolactic fermentation takes place in steel, again at a controlled temperature.
Refinement
Maturation takes place over a total of 30 months, of which 14 months in barriques, and a further 3 months in bottles.
