Smoked Loin of Wild Boar Bolognami, is produced with maturation of at least two months. Artisan product only from wild boar meat coming from slaughter in the Tuscany and Umbria region, processed within the territorial area of Lake Trasimeno, representing a true gastronomic and agri-food excellence. Surface treated with salt, pepper, garlic and left to rest for a short period, it is then prepared for a light and slow smoking, moderately hot, to ensure that all the essences of the process are released. In this way, already full of strong scents, it takes on delicate, tastier and more refined shades in the smoking process. A product that wants to tell in its authenticity of origin, a real strength and recognition by raising a territory defined by the culinary art and well identified geographically
