Description
Coppa di Testa Soppressata Bolognami, typical of Tuscany and Umbira, produced especially in Siena, Arezzo and Perugia. With a history stretching back thousands of years, it is prepared by boiling the pig's head after removing the hair and washing it well, boiling it in water for 5-6 hours, when the meat comes off the bone, it is minced with a knife, lemon and orange peel, minced garlic, spices and natural flavourings are added, it is placed in a cellulose food bag and left to cool for at least two days, or until it is completely cold and then it can be used. The typicality is due to the processing technique, which follows an ancient tradition unchanged over time, and also to the particularity of the raw materials and ingredients used; it was a dish of our 'Poor Regional Cuisine' and today it has become a true delicacy.
