Description

Bolognami Strettura Bread, has a unique and irreplaceable ingredient which is water. This bread takes its name from the town from which it comes, Strettura which is a small village of just over 120 inhabitants located in Umbria between Spoleto and Terni, rich in natural springs of water that rise from the mountains of the Umbrian-Marchigiano Apennines. Here the bread is still made according to tradition, with local soft wheat flour, sourdough, pure water and salt; after letting it rest for one night, the bakers work the dough again and give it the shape of a loaf, letting it rise for another hour and finally cooking it in a wood oven
