Description
Gladius Brut Terre de la Custodia, is a classic method wine made from Grechetto and Pinot Noir grapes, which are grown at an altitude of approx. 500 metres above sea level, using the spurred cordon training system from 15-year-old vineyards in the Torrececcona di Todi area. The soil in this area is mainly of medium consistency tending to clay. The surface area of the vineyard is approx. 2 hectares with a planting density of 5000 vines/hectare and an average production per hectare of 100 quintals.
Vinification
The grapes are harvested by hand during the coolest hours of the day, usually at the end of August, selected and placed in 10 kg perforated crates and immediately taken to the winery where they are cooled with dry ice to be started with the soft pressing of the whole bunches. The must is obtained at a pressure of 0.2 atm. Decanting is static for 12 hours and subsequent inoculation of selected yeasts for alcoholic fermentation. The entire vinification process is done in steel.
Refinement
After fermentation in the bottle, the wine remains on the lees for a minimum of 48 months.

Tasting Notes | In the glass it is an intense straw yellow colour. Perlage with numerous, persistent fine-grained bubbles. On the nose there is a clear note of bread crust accompanied by an intense sensation of bergamot, nougat and almonds that makes way for mineral sensations. In the mouth it is full, round despite a marked freshness, the finish is very savoury. |
