Description

Chicken Galantina Bolognami, s a typical preparation that is part of the traditional recipes of our beautiful region of Umbria, which have delighted the palate for centuries. Originally a dish that was prepared by the Massaie only for the most important festivities, particularly during the Christmas season, today it is prepared all year round. Its preparation is a ritual that has remained unchanged over time as a guarantee of absolute genuineness and quality. It starts with fresh chicken, is deboned by hand, carefully trimmed and then stuffed with a filling made from selected fresh meat, chicken meat, veal meat, pork and turkey meat and enriched and flavoured with, fresh vegetables, natural flavourings and spices, as well as hard-boiled eggs placed in the middle. The chicken, thus stuffed, is sewn with a needle and thread and tied with a string, and is steamed for a good six hours pressed into its characteristic elongated shape.
