Description

Pecorino Canestrato Caseificio Manciano, is a fresh soft sheep's cheese. Made from pasteurised sheep's milk with the addition of selected indigenous cultures, rennet and salt. The name derives from its shape, which recalls the wicker baskets once used for moulding cheese. The flavour tends to be piquant and it is generally eaten after a ripening period of 20 to 45 days.
