Description

Rye and Spelt Bread Bolognami, is an artisanal product consisting mainly of a cereal and a very healthy type of wheat. Rye has earned a reputation as an alternative to refined cereals. From a nutritional point of view, it is known for its high intake of iron, phosphorus, magnesium, B vitamins and dietary fibre in higher concentrations than other foods with similar characteristics. At the same time, it provides energy thanks to its carbohydrates which, unlike refined carbohydrates, do not cause glycaemic peaks. Spelt is equally important due to its high content of carbohydrates, proteins, vitamins and minerals. It is easier to digest than common wheat and its glycaemic index is low. This bread is therefore suitable for patients with diabetes or metabolic disorders.
