Bolognami Stigmas of Saffron, it is a unique spice in the world, known since ancient times, it is also called the Red Gold. It presents itself with a bright red color, a strong taste and a very intense aroma, thanks to the power of the safranal contained in it, it is the result of a rigorous processing process that goes from fertilizing the land with natural products, to the collection of flowers, from husking, meticulous manual separation of the stigmas from the remaining parts of the flower, drying at a temperature between 35 and 45 degrees, up to the roasting and final preparation. In the kitchen it is able to enrich numerous recipes, from North to South. For us Italians it is indispensable for Risotto alla Milanese, for the Spaniards it is indispensable for Paella alla Catalana, for the French it is indispensable for Bouillabaisse from Marseille. Saffron is one of the few water-soluble spices, so it must be immersed in a little hot water to release its color and aroma. You can also add the stigmas directly to the dishes, three filaments per person are a good rule of thumb
