Description

Cicerchie Bolognami, are an ancient legume of the Fabaceae family, recently rediscovered in Europe, but always present in Umbrian cuisine, where it is grown in a natural way from sustainable agriculture, it is very similar to small stones, gray white or dull yellow, and irregularly shaped. The latter represents one of their peculiarities. Before cooking, the Cicerchie need to soak for at least 24 hours. The Zuppa di Cicerchie, a typical dish of upper Umbria, is renowned, also as a condiment for a good plate of pasta combined with mushrooms
