Description

Melanto Passito Terre de la Custodia, is an interpretation of Sagrantino grapes that were originally only used to make sweet wine, due to the presence of residual sugar that helped soften the tannic roughness typical of the variety. These grapes are cultivated at an altitude of approx. 500 metres above sea level, using the spurred cordon training system in vineyards approx. 15 years old, located in the Gualdo Cattaneo area. The land is medium hilly, where we find strong, clayey soil with a good presence of lignite. The surface area of the vineyard is approx. 1 ha with a planting density of 3300 vines/hectare for an average production per hectare of 35 quintals.

Vinification

The grapes are harvested delicately by hand, usually at the end of September, selecting the best bunches and placed on racks for drying in temperature and humidity-controlled rooms for 30 days. After the bunches have reached the right sugar concentration, they are destemmed, lightly pressed and left to ferment in special 5 Hl steel tanks where they are periodically punched down and pumped over by hand. As soon as the right ratio of alcohol to residual sugar is reached, a series of filtrations is carried out to inhibit fermentation and to remove all impurities of vegetable origin.

Refinement

Maturation is carried out for at least 12 months in Barrique.

Tasting Notes In the glass it is an intense ruby red colour with garnet hues. The nose is complex and decisive, hints of blackberry jam, plums, cinnamon and biscuits make way for a liquorice finish. In the mouth it is persistent, a wine of great body and structure, warm and soft. The sugar present succeeds in perfectly balancing the tannin structure.
Pairing Advice
Pairing Accompanied by dry biscuits or chocolate and spice desserts. Also try the traditional version on stewed wild boar or roast lamb.
