Description

Bolognami Buristo Salami, Artisan product according to traditional Tuscan methods. Stuffed into the intestines of the pig to which the irregular shape is due, it is obtained by boning all the parts of the connective tissue of the animal put to boil in a large pot with lemons, orange peels, sage, garlic, salt and pepper. To the deboned and minced parts are added some pieces of fat cut into cubes and the filtered blood. Everything is again stuffed and boiled again to compact the dough, managing to obtain traditional flavors and aromas that are lost over the centuries
