Artisan Easter Dove Pears and Chocolate Il Forno di Pioppi, was born within the artisan production workshop in Mantignana (PG). A symbol of peace and universal brotherhood, the Dove "Colomba" is the Easter cake par excellence. After years of study and research into the raw material and balancing the ingredients, master bakers Fabio and Andrea Pioppi give life to this line of high quality leavened products, which in November 2020 was awarded third place in the BEST PANETTONE OF THE WORLD competition. This Dove boasts a leavening process of 36 hours at a controlled temperature with several kneading steps and an artisanal workmanship with manual kneading, in full respect of tradition, followed by baking and patient resting upside down so as not to ruin the structure. Inside, the alveolatura encloses delicate squares of semi-candied pears and single-origin 70% Ecquador chocolate, which accompany and enrich the aromatic scents of Belgian butter and Bourbon vanilla. An exquisite cocoa glaze with white chocolate curls covers the top. A complex aromatic bouquet and a perfect balance of flavours and textures for this extraordinary Dove in harmony with Italian tradition.
