Description

Rosato Terre de la Custodia is produced from Pinot Noir, Merlot and Sangiovese grapes grown at an altitude of approx. 300 metres above sea level, using the spurred cordon training system in vineyards approx. 15 years old, located in the areas of Montefalco, Gualdo Cattaneo and Todi. The soil in this area is mainly medium-textured, tending to limestone. The surface area of the vineyards is approx. 5 hectares with a planting density of 4500 vines/hectare and an average production per hectare of 110 quintals.

Vinification
The grapes are harvested by hand during the coolest hours of the day, which is usually at the end of August, and immediately taken to the winery where they are cooled, thus avoiding oxidative phenomena that could compromise the aromatic potential. Short skin maceration, necessary to extract the colour and aromas present in the skin. Soft pressing of the grapes in an oxygen-free environment to slow down the oxidasic activity of the enzymes as much as possible. Static decantation for 24 hours to clean the must, inoculation of selected yeasts to trigger alcoholic fermentation, which takes place at a low temperature for 12 days, in steel.

Refinement
The wine is matured on the lees for 5 months in steel.

Tasting Notes In the glass it is cherry pink in colour. The nose expresses red fruit and floral aromas such as, pomegranate, strawberry cherry blossom and broom. In the mouth it is fresh and savoury with an enveloping and elegant finish.
Pairing Advice
Pairing At ease to be served as an aperitif. Ideal with fish soups or lightly prepared first courses.
