Description

Sagrantino di Montefalco Perticaia, is made from 100% Sagrantino grapes and is the pride of the winery. This blend once vinified is characterised by a surprising tannic strength, but the winery has been able to work it with skill and mastery, so that in the bottles of their Sagrantino di Montefalco, this personality is partly dormant.

Vinification
The grapes are harvested by hand with bunch sorting, which usually takes place throughout the month of October, the period may change depending on the exposure of the vineyard. Once in the cellar, the bunches are pressed, with cold maceration for 48 hours. Fermentation is started by yeasts that are naturally present on the grapes. Contact with the skins lasts for about 30 days, of which the last 15 days are submerged cap.

Refinement
La maturation a lieu en fûts de chêne de 25 hl pendant 24 mois, suivie d'un passage dans l'acier pendant 3 mois, puis de la mise en bouteille avec un affinage supplémentaire de 12 mois avant la commercialisation.
