Description

Rapè Viognier Dario di Vaira, is a real discovery for how this vine manages to express its full potential in the Bolgheri amphitheatre.

Vinification
Harvest done manually in boxes with overnight stay in a thermo-conditioned environment to lower the temperature. Pre-fermentation cold maceration for 6 hours, controlled fermentation temperature not exceeding 16°C, 20% of the mass ferments in Hungarian oak barriques.

Refinement
Maturation on the lees for 4 months, 20% of the mass in Hungarian oak barriques, the rest in steel tanks, with batonnage every 10 days at a controlled temperature before bottling.
