Dario di Vaira
Dario di Vaira's estate, known by its former name of Eucaliptus, is a winery in the Bolgheri area that spreads over 18 hectares, 8 under vine, in an area highly suited to vines, located 6 kilometres from the sea and surrounded by the most important wineries in Tuscany. A project that was founded in the early 1960s by Pasqualino Di Varia, when at the time wine was still sold loose and reserved for a small group of friends and relatives. Today, at the helm of the winery we find Dario, who, after graduating in viticulture and oenology, decided to inherit the winery, change the outlook and invest heavily in this territory through the production of an excellent line of wines, starting from his own vineyards. A production that stems from an in-depth knowledge of the territory and long years of study that have led Dario to climb important heights, earning him praise from some of the most important guides in the sector. The winery is a true agritourism, because in addition to the vines they also grow olives, vegetables and 0 km fruits, which are promptly served in the family restaurant. Since the end of the 1990s, the Dario di Vaira wine cellar has decided to invest in quality, giving up large quantities for good. So they started with the vineyard, adopting an agriculture that respects the plant and the environment and drastically reducing the average yield. On the sandy clay soils, different varieties of red grapes are grown, from Sangiovese, king of Tuscany, to the greatest international vines bred in these lands to produce the noble Supertuscans, Merlot, Cabernet Sauvignon, Syrah and Petit Verdot. As for the white varieties, there are Chardonnay, Viogner and Vermentino. After manual harvesting, the grapes are brought to the cellar where alcoholic fermentation takes place in temperature-controlled steel containers with the most modern equipment. Ageing takes place, mainly for the reds, in new or used French oak barriques. Dario di Vaira wines are characterised by an elegant and refined structure, typical of this area. The two reds produced are full-bodied, warm and intense, yet have a majestic and noble bearing. The whites are characterised by a fresher, more direct texture, marked by a light marine imprint.
