Bolgheri Superiore Caccia al Piano 2019

Bolgheri Superiore Caccia al Piano, is a careful and meticulous selection of the best grapes from the San Biagio vineyard, the estate's most important cru and one of the most vocated in the Bolgheri area. A blend of the two grape varieties that by antonymasia have found in this small paradise protected by woods the ideal conditions to express character, structure, elegance and propensity to age. This is the identity card of Caccia al Piano Bolgheri Superiore DOC, the new excellence created by the Ziliani family.

Vinification
For this vintage, the Cabernet Franc harvest began at the end of September and was completed in a few days, while the Cabernet Sauvignon was harvested in the first few days of October with an average yield per hectare of around 60 quintals of grapes. As always, the different grape varieties are harvested by hand at different times and then vinified separately. Once the grapes arrive at the winery in 15 kg crates, after careful manual selection on the sorting table, they are destemmed whole grapes and then fermented in both stainless steel and oak vats at a controlled temperature.

Refinement
After maturing for one year in French oak barrels from certified Allier and Tronçais forests, both new (50%) and second-passage, selected from the best tonnellerie with different degrees of toasting, the different wines are finally blended. This is followed by a further resting phase in both large casks and barriques for approximately 12 months. After bottling, a further 6 months of refinement in the bottle gives the wine harmony and elegance.
