Description
Trebium Antonelli, is produced from Trebbiano Spoletino organic grapes, an indigenous variety of Umbria that extends between Montefalco, Trevi and Spoleto. The vineyards are cultivated at an altitude of approximately 350 metres above sea level with Guyot training system and western exposure. Defined by the winery as a massive selection from the old vines that are supported by maple poles, this too is a small but important sign of how the company, even in the smallest processes, always prefers to use practices linked to respect for nature and its rhythms.
Vinification
The grapes are harvested manually during the coolest hours of the day, usually in mid-October. Once in the cellar, the grapes undergo a soft pressing with a short maceration, and fermentation takes place in large 25-hectolitre oak casks where it stays on the lees for about 6 months.
Refinement
Once in the bottle it matures for about 4 months.

Tasting Notes | In the glass, it is an intense straw yellow colour with golden reflections. The nose is very broad, with different olfactory groups such as fruity with notes of pineapple, melon, peach and apple, citrus and something tropical. Immediately afterwards, floral notes with almond blossom and hawthorn, not to be missed in the finish with nuances of cinnamon and sage, make the olfactory picture extremely elegant. On the palate, it is soft with a beautiful structure given by the freshness and sapidity that envelops the entire mouth, making it extremely cheerful and dynamic to drink. |
Pairing Advice | |
Pairing | Certainly a very versatile wine, it accompanies noble cold cuts such as prosciutto crudo and culatello typical of tradition, carpaccio or raw meat and fish. A noble companion for structured first courses such as spaghetti alla carbonara, saffron risotto and elaborate fish or white meat main courses. Finally, with tasty cheeses. |
