Description

Spruce Honey Bolognami, harvested in Tuscany, is one of the most special types produced and the characteristic that distinguishes it from the others lies in the harvesting process that is carried out by bees. Normally these collect nectar from the flowers of plants, but in some wooded areas, where nectar production is very low, this cannot happen. In these areas, therefore, bees use an alternative ingredient to produce honey, honeydew. This is a sticky, sugary substance found on leaves. Compared to nectar honeys, fir honey is denser, darker in colour, sometimes greenish, has a distinctive resinous and balsamic flavour and is very rich in minerals.
