Preparation of Grilled Chicken

First, wash the chicken well and dry it, open it halfway without dividing it, mash it as much as possible, prepare a mince with the garlic, the sage, the rosemary, leaving a whole sprig that you will need afterwards, mix the minced meat that you have obtained with the salt and pepper that you will dose as you like, add a little extra virgin olive oil and you will have obtained the so-called Pillotto (widely used in Tuscany and Umbria for roasts). Squeeze the juice from the two lemons and set aside. At this point, put the chicken in an earthenware or glass container and start making small cuts, with a pointed knife, all over the chicken, especially on the breast and thighs and insert the minced meat inside, sprinkle what is left over all the chicken. Sprinkle with the lemon juice that you prepared previously and add the olive oil. Leave to rest for 8 to 12 hours to infuse. Prepare the embers, let it dilute, it must not be too hot, put the chicken on a double grill, so you can turn it easily.
