Damo Nobile di Montepulciano Selezione Montemercurio, is produced with grapes from the old vineyard, planted over 60 years ago and located under the Temple of San Biagio in Montepulciano. The birth of this vineyard came about thanks to 'Nonno Damo', who planted the first Sangiovese vines in the 1960s and tended them until 2006, the year he passed away. Damo is the modern interpretation of Nobile di Montepulciano made by Montemercurio, a wine with a very long tradition that they now want to interpret in a personal company guise, capable of being similar only to itself. This Nobile di Montepulciano is a wine that has been made with the utmost care in every detail, nothing is left to chance either in the vineyard or in the cellar, this is because the winery has wanted to emphasise all the work and the path that the fruit takes from the vine to the wine. This is why the grapes deserve special attention so as to offer the consumer a unique emotion that tells of the beauty of the vineyards and the perfumes of the Poliziane lands. Damo is produced with 80% Sangiovese, 20% Canaiolo Nero, Mammolo, Colorino and a small percentage of Barbera grapes. The vineyards are located at approx. 450 m above sea level with a South/West exposure for a yield per hectare of 5000 Kg of grapes. Here we can find mainly hilly, medium-textured soil with a good presence of clay.
Vinification
After careful manual selection in the vineyard, the bunches are selected again on arrival at the winery, the grapes are then vinified in small containers to optimise the extraction of components from the skins. Fermentation is conducted only with natural yeasts. Skin contact varies from a minimum of 18 days to a maximum of 25-28 days during which brief pumping over and punching down are carried out.
Refinement
The wine is transferred into small 10hl Slavonian barrels where it undergoes malolactic fermentation and sota for at least 30 months. During this period, racking is carried out to clarify it and make it ready for bottling, which takes place through filtration but without any clarification. After bottling, the wine matures for at least 18 months.
