Description
Franciacorta Rosè Brut Marchese Antinori by Tenuta Montenisa, is a classic method that was born in the heart of Franciacorta, around the Borgo di Calino. This classic method was created to best express the peculiarities of Pinot Noir through a great personality with intense and vibrant aromas.
Vinification
The grapes are harvested manually, with careful selection of the bunches. Small crates are used for the harvest to prevent the grapes from breaking and the danger of fermentation starting. On arrival at the winery, the manually harvested grapes are directly subjected to a soft pressing. The 'flower' must, obtained from the first pressing, was transferred to stainless steel tanks where alcoholic fermentation took place at a controlled temperature.
Refinement
The wine then began the second fermentation process in the bottle according to the classic method, in contact with the yeasts, for a period of at least 24 months. The remuage is carried out by hand, according to the most classic tradition, so that the most special attention is paid to each individual bottle. After disgorging, the bottles rest for at least 3 months before being released onto the market.
