Description

Vino Nobile di Montepulciano Boscarelli, is the winery's oldest label, the most representative and emblematic of its working philosophy. Since its first release in 1968, it has always constituted about half of the production, and its composition and ageing have remained substantially unchanged since then. Most of the vineyards in Cervognano are planted on calcareous soils of alluvial and sandy origin, with a good percentage of silt, clay and stony skeleton that varies according to the position and altitude of the sites.

Vinification
The grapes, harvested by hand and transported in crates, after destemming and a soft crushing are placed in oak or steel vats filled to no more than two-thirds of their capacity for fermentation. Fermentation, carried out with indigenous yeasts, lasts about a week at controlled temperatures of 28 to 30 degrees. Manual pumping over and punching down of the cap is carried out. Maceration continues, where appropriate, for a further 5 to 8 days after fermentation.

Refinement
The wine is matured in Allier and Slavonian oak barrels with capacities ranging from 5 to 35 hl, where malolactic fermentation also takes place. Maturation lasts 18 to 24 months. Before bottling, a slight filtration is carried out, if necessary. The wine is then bottle-aged again for a few months before release.

Tasting Notes In the glass it is an intense ruby red colour. The nose has elegant hints of violet roses, morello cherry and wild berry jam, combined with spicy and mineral notes with traces of liquorice and toast. On the palate it is soft, firm, warm, enveloping and elegant, a structured and sustained red with a dense tannic texture.
Pairing Advice
Pairing It goes very well with main courses of red meat, game and poultry, roasts and stews. Perfect with meat ragout dishes and risottos, it is ideal with game. Try it with mature cheese.
