Description

Grechetto Colli Martani Terre de la Custodia, is produced from Grechetto grapes grown at an altitude of approx. 400 metres above sea level, using the spurred cordon training system from vineyards approx. 16 years old, located in the Montefalco area. The soil in this area is mainly medium-textured, tending to clayey. The surface area of the vineyard is approx. 5 hectares with a planting density of 5000 vines/hectare and an average production per hectare of 100 quintals.

Vinification

The grapes are harvested by hand during the coolest hours of the day, usually from mid-September, and immediately taken to the winery where they are cooled, thus avoiding oxidative phenomena that could compromise the aromatic potential, as well as unwanted fermentation starts. White vinification with soft pressing of the grapes in an oxygen-free environment to slow down the oxidasic activity of the enzymes as much as possible. Static decantation for 24 hours to clean the must, inoculation of selected yeasts to trigger alcoholic fermentation. Fermentation takes place at a low temperature for approx. 5-6 days in steel. Halfway through fermentation, 10% of the mass is racked into barriques where alcoholic fermentation continues at a controlled temperature. Part of the mass undergoes malolactic fermentation, also in barriques.

Refinement

Maturation of the masses is done in barriques and steel for a total of 6 months. After the masses are assembled in steel, they are further refined after bottling for at least another 2 months.

Tasting Notes In the glass it is an intense yellow colour with golden hints. The nose immediately perceives yellow peach, citrus fruits and broom flowers, notes of exotic fruit such as mango, with a finish of Mediterranean scrub and asparagus. In the mouth, it is immediately noticeable for its freshness and savouriness, the taste is enveloping and full with a pleasant softness.
