Description

Petaso Rosso di Montepulciano represents for the Montemercurio winery a wine with its own history and its own distinct identity. It is the result of a selection of grapes grown in the new Sangiovese plantations and a small quantity of Merlot, produced with the utmost care in order to enhance its pleasantness and drinkability. Petaso Rosso di Montepulciano Montemercurio, is produced with 95% Sangiovese, 5% Merlot grapes, the average age of the vineyards is 15 years, and they are located at approx. 450 m a.s.l. with South/West exposure for a yield per hectare of 5000 Kg of grapes. Here we can find mainly hilly, medium-textured soil with a good presence of clay.

Vinification
After careful manual selection, the grapes are vinified in small containers to optimise the extraction of components from the skins. Fermentation is carried out without selected yeasts, the wine remains in contact with the skins for a minimum of 15 days and a maximum of 20 days, during which pumping over and punching down are carried out.

Refinement
The wine is transferred into large Slavonian oak casks where it undergoes malolactic fermentation and stays for at least 18 months, during which time some racking is carried out to clarify it and make it ready for bottling. After bottling, the wine matures for at least 10 months.
