Cured Leg of Wild Boar Bolognami, is produced with a minimum maturing period of three months. An artisanal product made exclusively from wild boar meat from slaughterings in the regions of Tuscany and Umbria, processed within the Lake Trasimeno area, which represents true Gastronomic and Agri-food excellence. It starts by boning the thigh, as this guarantees a more homogeneous seasoning, and is then treated on the surface with salt, pepper and garlic and left to rest. A product that wants to tell in its authenticity of origin, a real strong point and recognisability raising a territory defined by the culinary art and well identified geographically.
