Description
Tenuta Guado al Tasso's Scalabrone by Antinori is produced in the small and prestigious DOC area of Bolgheri, on the coast of the Alta Maremma, about one hundred kilometres south-west of Florence. Tenuta Guado al Tasso covers an area of about 320 hectares under vine in a splendid plain surrounded by hills known as the "Bolgheri amphitheatre" for its particular conformation. The vineyard, as well as the wine, takes its name from the bandit "Scalabrone" who lived in this area in the early 1800s, a local Robin Hood who used to attack ships in the ancient port-canal of Bolgheri.
Vinification
The harvest began with Merlot at the beginning of September, continued with Syrah and ended during the middle of the month with Cabernet Sauvignon. Each variety was harvested and vinified separately. The grapes were destemmed, gently crushed and transferred to the press where they underwent a short maceration of about 2-4 hours at low temperature to bring out the richness of the aromatic precursors. After pressing, the must reached stainless steel tanks where alcoholic fermentation took place at a controlled temperature of 16 °C.
Refinement
The different batches were carefully and regularly evaluated and blended. Then it was bottled in the early winter months.
