Description

Cervaro della Sala Antinori, derived from the noble family that owned Castello della Sala during the 14th century, the Monaldeschi della Cervara. Chardonnay grapes blended with a small portion of Grechetto for a wine designed to age over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian wines to be aged in barriques with the first vintage in 1985.

Vinification
The timing of the harvest was chosen by seeking the maximum expression of the fruit. The harvest of the Chardonnay began towards the end of August with healthy, ripe grapes characterised by excellent freshness and an excellent aromatic profile. The Grechetto harvest took place in mid-September. The vinification cellar is built to take full advantage of the principle of gravity and allows the grapes to be handled and macerated without being subjected to mechanical intervention by pumping. The grapes are vinified separately, and the musts, obtained by pellicular maceration of the grapes at 10 °C for about four hours, are transferred by gravity to decantation tanks where they clarify before being transferred to barriques where alcoholic fermentation takes place followed by malolactic fermentation. The Grechetto makes only steel.

Refinement
A few months after the start of winter, the Chardonnay is ready to be transferred back into steel to join the Grechetto. The Cervaro della Sala then matures for a few months in the bottle in the historic cellars of Castello della Sala before release.

Tasting Notes In the glass it has a straw yellow colour with some greenish reflections. The nose is complex, with intense notes of citrus and acacia flowers combined with hints of vanilla. The palate is rich, mineral and marked by light notes of hazelnut butter. Long and persistent.
Pairing Advice
Pairing Ideal with grilled fish or shellfish meals. Excellent with seafood crudités or white meats. To be paired with mature cheese.
