Description
Rosato Montemercurio, is made with grapes from the same vineyards used for the production of Vino Nobile di Montepulciano. For this reason, the winery pays the utmost attention to the cultivation of the grapes and their health. For this wine, a special harvest is carried out, the grapes are picked at least 3 weeks before the normal harvest period. Rosato Montemercurio, is made from 70% Sangiovese, 20% Caniolo Nero, Mammolo and Colorino grapes. The vineyards are 15 years old and some are over 50 years old, and are located at approx. 450 m above sea level with a South/West exposure for a yield per hectare of 5000 Kg of grapes. Here we can find mainly hilly, medium-textured soil with a good presence of clay.
Vinification
The grapes are hand-selected, gently destemmed and subjected to cryomaceration for a few hours at a temperature of 8°C. The must obtained is placed in stainless steel tanks at a temperature of 10°C in order to achieve natural decantation. Alcoholic fermentation then takes place at low temperatures to keep the primary aromas typical of fresh fruit intact. Batonnage in steel is carried out during this period.
Refinement
After alcoholic fermentation, the wine stays for at least 5 months on the fermentation yeasts. After bottling, the wine matures for at least 3 months.
