Ingrediants:
300 gr. by Spelled Bolognami
1 bunch of rocket
2 Thigh Pears
60 gr. of Spicy Gorgonzola
1 Teaspoon of Bolognami Millefiori Honey
1 Teaspoon of Wine Vinegar
4 Spoons of Extra Virgin Olive Oil Gran Cru Santa Lucia Bolognami
Fior di Sale di Trapani Bolognami to taste
Black pepper from Kampot Bolognami to taste

Preparation:
1) Rinse the Bolognami Spelled and boil it in abundant salted water for about 45 minutes. Drain it. Let it cool and transfer it to a large bowl

2) Mix the Extra Virgin Olive Oil Gran Cru Santa Lucia Bolognami in a bowl with the vinegar, honey, a pinch of salt and a generous grinding of pepper, mix again and set aside. Wash the rocket, drain it and chop it coarsely. Cut the Gorgonzola cheese into small pieces

3) Wash the pears without peeling them, dry them, cut them into wedges, remove the core and then reduce them into very thin slices

4) Add the rocket leaves, slices of pear and pieces of Gorgonzola to the spelled, season with the honey sauce and serve. Excellent as an appetizer, first course, or single course, in all seasons
