300 gr of Decorticated Bolognami Red Lentils
160 gr of Cherry Tomatoes
80 gr of Carrot
2 cloves of garlic
8 Extra Virgin Olive Oil Santa Margherita Bolognami
1 Spoonful of Freshly Chopped Parsley
4 Glasses of Water Approx

For Seasoning:
Freshly ground black pepper from Kampot Bolognami
4 Sprigs of Fresh Parsley
Extra Virgin Olive Oil Santa Margherita Bolognami

Preparation:
First, soak the Bolognami Decorticated Red Lentils in plenty of cold water for 15-20 minutes, in the meantime wash the tomatoes and carrots and cut them into small pieces. Place the Extra Virgin Olive Oil Santa Margherita Bolognami® and the garlic cloves in a rather large pot, brown until golden brown, add the tomatoes and carrots, brown for a few minutes over medium heat, put the drained lentils and 1 tablespoon of parsley. Cook for a few seconds, turn over medium heat, lower the heat and add 2 glasses of water, let it cook over low heat for about 20 minutes. After the indicated time has elapsed, the lentils will have doubled their volume and absorbed the water, uncover and add another 2 glasses of water and the salt, cook for another 8-10 minutes over low heat, making sure that the mixture always remains rather liquid, the Lentils (now cooked and slightly darker in color) must have the necessary water to be blended without being too compact. Turn off the heat and pass the mixture in a mixer, mini pimer or blender, until the lentils and vegetables have completely transformed into a smooth and velvety cream. (if you see that the cream is too thick, add 1-2 tablespoons of lukewarm water, on the contrary, if you consider that the consistency is too liquid, once the cream is made, put it back on the heat for 1-2 minutes). Serve piping hot. Put on the plates and finish the Lentil Cream with the Extra Virgin Olive Oil Santa Margherita Bolognami, a freshly ground of Kampot Bolognami Black Pepper. If you want you can add some croutons of Umbro Bolognami or baked bread, or more delicious fried ones, always in our Olive Oil. Enjoy your meal
