Bolognami I.G.P. Norcia Reserve Ham, aged for at least twelve months, it is an artisanal product obtained from the processing of fresh pork legs, belonging to purebred breeds or derived from Italian Large White, Italian Landrace and Italian Duroc. The salting is carried out in two stages, using sea salt, then the surfaces of the pulp and any cracks are coated with a mixture composed of pork fat, pepper and natural flavors, so it is ready for the final seasoning. The elaboration of Prosciutto di Norcia I.G.P. must take place in the traditionally suited area, which includes the municipalities of Norcia, Preci, Cascia, Monteleone di Spoleto, Poggiodomo, in the territories located at an altitude above 500 m.s.l. as required by the protection specification. When cut it has a bright red color with lighter parts, little presence of marbling, the fat present is beautiful with a pure white color. The flavor is strong, almost sharp, typically savory and tasty
